A naturally sweet, grab-and-go snack made from dates, walnuts and seeds, with a scoop of God’s Own Vitality blended right in.
Prep time: 15 minutes (plus 20 minutes chilling)
Cook time: None
Servings: About 14 bites
Ingredients
1 cup pitted Medjool dates (about 10), packed
1 cup raw walnut halves
2 tbsp ground flaxseed, plus extra for rolling
1 tbsp chia seeds
2 tbsp almond butter or natural peanut butter
1 serving God’s Own Vitality
1 tsp ground cinnamon
½ tsp pure vanilla extract
Pinch of sea salt
1 to 2 tsp water, if needed
For rolling: unsweetened shredded coconut and/or ground flaxseed
Instructions
If the dates feel dry, soak them in warm water for 5 minutes, then drain well.
Pulse the walnuts in a food processor until finely chopped but not powdery, about 10 pulses.
Add the dates, flaxseed, chia seeds, almond butter, God’s Own Vitality, cinnamon, vanilla and salt. Process for 1 to 2 minutes until the mixture clumps together when pinched. Add water a teaspoon at a time if it’s too crumbly.
Scoop out level tablespoons and roll each into a ball between your palms.
Roll half the bites in shredded coconut and half in ground flaxseed.
Chill on a plate for 20 minutes to firm up. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
Tip: Dates, flax, chia and the inulin in God’s Own Vitality make these a fiber-rich snack that supports digestion. Enjoy one or two with a glass of water or a cup of tea for an afternoon pick-me-up.
