Berry Chia Overnight Oats with Kefir & Maca

A no-cook, fiber-rich breakfast made from simple seed-bearing foods. Stir it together tonight and grab it tomorrow morning.

Prep time: 10 minutes (plus overnight chill)

Cook time: None

Servings: 2

Ingredients

  • 1 cup old-fashioned rolled oats

  • 2 tbsp chia seeds

  • 1 cup plain unsweetened kefir (or plain yogurt thinned with a splash of water)

  • ½ cup unsweetened almond milk or milk of choice

  • 1 tsp organic maca powder, or 1 scoop God’s Own Vitality

  • 1 tbsp raw honey or pure maple syrup, plus extra for drizzling

  • ½ tsp ground cinnamon

  • Pinch of sea salt

  • 1 cup fresh blueberries (or mixed berries)

  • 1 small ripe banana, sliced

  • 2 tbsp chopped walnuts, lightly toasted

Instructions

  1. In a bowl, mix the oats, chia seeds, maca (or Vitality), cinnamon and salt.

  2. Stir in the kefir, almond milk and honey until no dry pockets remain.

  3. Gently fold in half of the blueberries.

  4. Divide between two jars or containers, cover, and refrigerate at least 6 hours or overnight.

  5. In the morning, stir. If it is too thick, add a splash of milk.

  6. Top with sliced banana, the remaining blueberries, toasted walnuts and a light drizzle of honey. Enjoy cold.

Tip: Kefir brings live cultures and the oats, chia and banana bring natural fiber, a simple way to add whole-food goodness to your morning. Keeps covered in the fridge for up to 2 days (add toppings just before serving).
